Christmas Cake

Christmas is coming! My children will not eat a traditional rich fruit cake, and so a ginger cake is the Christmas cake of choice in our house for Christmas day teatime. If you have lots of people visiting over Christmas, or just want a special festive treat, let me create the centre piece for your Christmas tea.

This cake is made of 3 layers of spiced ginger sponge with surprise candy cane striped vanilla buttercream filling, iced with royal icing and decorated with a Christmas tree topped with a star. Delicious and very more-ish!
